Sweet Red Pepper Jelly

Ingredients
  • 1 large red sweet peppers, cored and seeded
  • 1 1/2 tbsp pectin crystals
  • 1/3 cup white or cider vinegar
  • 1/4 tsp butter or margarine
  • 1 3/4 cups sugar

Instructions
  1. Place the peppers in a food processor and pulse until chopped finely.
  2. Transfer the chopped peppers to a large pot with the remaining ingredients.
  3. Heat to boiling and continue to boil for about 10-15 minutes, stirring constantly.
  4. Skim any foam which accumulates at the top and remove from stove element.
  5. While the jelly is still hot, ladle it into hot jars, leaving a ¼ inch headspace.
  6. Let cool in refrigerator and serve with orderves.
  7. *optional* To can (if making larger quantities) screw on lids of jars and process in a boiling water bath for 10 minutes.
