Shrimp, Tomato and Cucumber Salad with Honey Dijon Vinaigrette

Ingredients
  • 1 pound extra large shrimp - cooked 16- 20 count 
  • 1 pint cherry tomatos, cut in half
  • 1/2 cucumber sliced and halved
  • 1 small shallot sliced thin
Honey Dijon Vinaigrette
  • 1 TBSP Dijon mustard
  • 2 teaspoons honey
  • 1/2 teaspoon basil 
  • 1/3 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  •  salt and pepper

Preparation​​
  1. In a salad dressing shaker jar add all the ingredients and shake well to combine.
  2. Next, add all the ingredients to a large mixing bowl and then cover it with the dressing and mix well to combine.
  3. Then simply transfer to the shrimp salad to a serving platter and enjoy!
