Orecchiette with Sweet Sausage and Dandelion Greens
Ear-shaped pasta cooked with sweet Italian pork sausage, greens, and blue cheese.
- Cook pasta according to package directions, drain, and set aside.
- Warm 2 tablespoons olive oil in a large sauté pan over medium high heat. Add the sausage and cook until browned,about 6 to 7 minutes, stirring frequently.
- Add the garlic and cook for 30 seconds. Add the greens, and cook until tender, about 5 minutes. Reduce heat, and stir in the cheese and chili flakes.
- When most of the cheese has melted, add the pasta. Stir until all ingredients are evenly distributed. Season with salt. Drizzle with extra virgin olive oil before serving.
