Orecchiette with Sweet Sausage and Dandelion Greens

Ear-shaped pasta cooked with sweet Italian pork sausage, greens, and blue cheese.
Ingredients  
  • 12 ounces orecchiette
  • Salted water for cooking pasta
  • 2 tablespoons olive oil
  • 1 pound sweet Italian sausage (out of casings)
  • 4 cloves garlic minced
  • 10 ounces dandelion greens cut into 1 ½ - inch pieces
  • 4 ounces Maytag blue cheese
  • 2 teaspoons red chili flakes
  • Extra Virgin Olive Oil for drizzling

Preparation
  • Cook pasta according to package directions, drain, and set aside.
  • Warm 2 tablespoons olive oil in a large sauté pan over medium high heat. Add the sausage and cook until browned,about 6 to 7 minutes, stirring frequently.
  • Add the garlic and cook for 30 seconds. Add the greens, and cook until tender, about 5 minutes. Reduce heat, and stir in the cheese and chili flakes.
  • When most of the cheese has melted, add the pasta. Stir until all ingredients are evenly distributed. Season with salt. Drizzle with extra virgin olive oil before serving.
