Olive Oil Cake with Fuyu Persimmons and Cardamom
Preparation
-Set oven to 325°F
-Cut Fuyus into large coins and line at the bottom of greased 9 inch round pan
-Whisk together oat milk and vinegar until frothy
-Add together dry ingredients then stir milk mixture in
-Slowly pour on top of persimmons in pan
-Bake for about 45 minutes until fork comes out clean
-Let cool, serve.
