Kale and Potato Breakfast Hash
Preparation
- If you have a pan that is safe to go in the oven, preheat the oven to 400 degrees Fahrenheit. Otherwise, you can do this all on the stove top.
- Heat the oil in a large saute pan over medium-high heat. Saute the potatoes for 5 minutes, until browned. Add the peppers, garlic and green onions and cook for 2 minutes until softened. Add the kale and cook until wilted, about 1 minute. Season with salt and pepper.
- Create three small wells in the pan and crack the eggs. Turn the heat down to medium-low and cook until the eggs are cooked through, about 10 minutes. Otherwise, put the pan in the oven and cook for 6 minutes until the eggs are done. Enjoy immediately!
