Herb-Roasted Carrots & Red Potatoes

Ingredients:
  • 1/2 Tbs. extra virgin olive oil
  • 1/2 Tbs. butter
  • 1/2 lb. redskin potatoes, cleaned and cut into 1/2-inch dice
  • 4 carrots, peeled and cut into 1/2-inch dice
  • 1/2 yellow onion, cut into 1/2-inch dice
  • 1 Tbs. fresh parsley leaves, chopped
  • 1 tsp. fresh rosemary leaves, finely chopped
  • Salt and pepper, to taste

Preparation
Preheat oven to 400 degrees.
Toss all ingredients together in a large bowl and spread out evenly on a large rimmed baking sheet.
Roast for 15 minutes and remove from oven and stir the mixture. Roast for another 15-20 minutes until golden brown and potatoes are fork tender.
