Grilled Sunburst Squash with Creamy Burrata, Basil & Tomatoes
Preparation
1. Preheat grill to medium-high. Quarter squash, spray with non-stick spray, and season with salt & pepper. Grill for 3-4 minutes per side, just until char marks appear and squash softens.
2. While squash grills, quarter small tomatoes, slice basil in thin strips, and mix pesto with olive oil for a dressing.
3. Pull cooked squash from grill, and let cool for 5 minutes. Add to a large bowl with tomatoes, topping with burrata ball, strips of basil, and drizzle the pesto dressing mixture over the top. Sprinkle with salt & pepper and enjoy as a side dish with grilled salmon or chicken, or add pasta to the dish for a main dish.
