Fresh Passionfruit Sauce
Preparation
1 In a blender, combine water, fresh passionfruit pulp, sugar, corn starch, and salt. Blend until very smooth.
2 Pour puree through a fine mesh strainer to filter out all seed pieces. If a few pieces make it through, it's okay.
3 Discard seed pulp. Place passionfruit mixture in a small saucepan and set over medium heat.
4 Bring to a simmer and cook for 5 to 10 minutes or until sauce thickens up enough to coat the back of a spoon without dripping off.
5 Allow sauce to cool at room temperature before refrigerating.
Chef's Note: Passionfruit sauce is excellent served over cheesecake, ice cream, yogurt, custard, pancakes, waffles...be creative. Keeps up to a week in the refrigerator.
