Chilled Beet and Cantaloupe Soup
Preparation
- Peel beets and steam in a steamer basket until tender, about 5 minutes.
- Cut beets into quarters.
- Cook onion in 1 tablespoon butter or oil until tender, about 5 minutes.
- Add garlic and cook for 1 minute.
- Puree onion, garlic, and beets in a food processor or blender.
- Cut cantaloupe in half, remove seeds, scoop out, and puree with beets.
- Season with lemon juice and salt.
- Add orange juice and serve chilled
