Caramelized Baked Persimmons

serves 4-6 The persimmons release their own natural juices in this baked dish and become caramelized in what turns into a lovely thick spicy syrup. Serve the persimmons with a dollop of whipped cream and drizzled with its caramel syrup. Ingredients

PreparationPreheat oven to 350 degrees F. Grease a 9x13 baking dish with butter.
Peel and cut the tops off of the persimmons, cut them in half crosswise. Place cut side up in baking dish.
In a small bowl, combine honey, melted butter, lemon juice, cinnamon, allspice, ginger and salt. Add hot water and stir until dissolved. Pour mixture over fruit.
Cover dish with foil and bake until persimmons are soft, about 35-40 minutes. At the half way point baste the persimmons with the juice. Recover and continue baking.
Remove foil and spoon syrup over fruit. Place dish under broiler until persimmons are browned, about 5-10 minutes. Keep an eye on them so they don’t burn.
