    Creamy Roasted Cauliflower Soup

    Ingredients

    • Cauliflower
    • Olive oil
    • Salt
    • Red onion
    • Garlic
    • Vegetable broth
    • Butter
    • Lemon juice
    • Nutmeg
    • Fresh herbs for garnish (optional)

    Instructions

    1. Preheat the oven and roast the cauliflower with olive oil and a little salt until tender and caramelized.
    2. In a soup pot, sauté the onion in olive oil until softened.
    3. Add garlic and cook briefly, then add the broth.
    4. Add the roasted cauliflower and simmer to bring the flavors together.
    5. Blend until smooth with butter.
    6. Add lemon juice and nutmeg, season to taste, and serve with fresh herbs on top.

    Simple Chard and White Bean Saute

    Ingredients

    • Swiss chard
    • White beans (such as navy beans)
    • Yellow onion
    • Garlic
    • Olive oil
    • Ground cumin
    • Salt
    • Black pepper

    Instructions

    1. Heat olive oil in a large sauté pan and cook the onion until translucent.
    2. Add chopped chard stems, garlic, cumin, and white beans; cook until the stems soften (and let the beans caramelize a bit if you want).
    3. Add chard greens and cook just until wilted.
    4. Season with salt and pepper and serve.

    • Sweet potatoes
    • Butter
    • Salt

    Instructions

    1. Preheat the oven (the recipe is commonly roasted at high heat).
    2. Cut sweet potatoes into thick rounds and arrange them in a single layer with a little space between pieces.
    3. Coat with melted butter and season with salt (and pepper, if using).
    4. Roast for about 20 minutes.

    Chimichurri Chicken

    • Red wine vinegar

    Instructions

    1. Make the chimichurri by processing parsley, garlic, shallot, oregano, chili, vinegar, salt, and pepper, then stir in olive oil.
    2. Mix part of the chimichurri with oil, salt, and pepper and coat the chicken. Let it marinate.
    3. Sear the chicken in a hot skillet until browned on both sides.
    4. Transfer the skillet to the oven and cook until the chicken reaches a safe internal temperature.
    5. Rest briefly, then spoon more chimichurri over the chicken before serving.
