    Roasted Beet Crostini

    Ingredients

    • Beets
    • Baguette or crusty bread
    • Goat cheese
    • Olive oil
    • Balsamic vinegar or balsamic glaze
    • Honey (optional)
    • Fresh herbs (thyme, rosemary, or parsley)
    • Salt
    • Black pepper
    • Nuts (optional: walnuts or pistachios)

    Instructions

    1. Roast the beets until fork-tender, then peel and slice.
    2. Slice bread, brush with olive oil, and toast until crisp.
