    Creamy Roasted Cauliflower Soup

    Ingredients

    • Cauliflower
    • Onion
    • Garlic
    • Olive oil
    • Vegetable broth
    • Milk or cream (or dairy-free alternative)
    • Lemon
    • Salt
    • Black pepper
    • Fresh herbs (optional)
    • Toppings (optional: croutons, pepitas, chives)

    Instructions

    1. Roast cauliflower until browned and tender.
    2. Sauté onion in olive oil until soft; add garlic and cook briefly.
    3. Add roasted cauliflower and broth; simmer to bring it all together.
    4. Blend until smooth.
    5. Stir in milk/cream and lemon; season to taste.
    6. Serve hot with your favorite toppings.

    A “Cat Her Dough” and Pile of Greens

    Ingredients

    • Pizza dough (store-bought or homemade)
    • Mixed greens (spinach, chard, kale, or similar)
    • Olive oil
    • Garlic
    • Onion or scallions
    • Salt
    • Black pepper
    • Cheese (optional: feta, mozzarella, parmesan)
    • Lemon (optional)
    • Red pepper flakes (optional)

    Instructions

    1. Preheat oven and prepare a baking sheet or stone.
    2. Sauté greens with olive oil, onion/scallions, and garlic until wilted; season.
    3. Stretch dough into a flat round/oval and transfer to your pan.
    4. Top with the greens (and cheese if using).
    5. Bake until crust is golden and cooked through.
    6. Finish with a squeeze of lemon and/or a drizzle of olive oil, then slice.

    Olive Oil Braised Chicken with Citrus, Fennel, and Turmeric

    Ingredients

    • Chicken (bone-in pieces or thighs)
    • Olive oil
    • Fennel bulb
    • Citrus (orange and/or lemon)
    • Garlic
    • Onion or shallot
    • Turmeric
    • Chicken broth (or white wine + broth)
    • Salt
    • Black pepper
    • Fresh herbs (optional: parsley, thyme)

    Instructions

    1. Season chicken with salt, pepper, and turmeric.
    2. Sear chicken in olive oil until browned; remove to a plate.
    3. Sauté fennel and onion/shallot until softened; add garlic.
    4. Add broth (and/or wine) and citrus; scrape up browned bits.
    5. Return chicken to the pan; simmer covered until tender and cooked through.
    6. Spoon pan juices over the chicken and serve with the fennel and citrus.

    Whole Roasted Cauliflower with Lemon Thyme Vinaigrette

    • Whole cauliflower
    • Olive oil
    • Lemon
    • Fresh thyme

    Instructions

    1. Preheat oven. Trim cauliflower and keep it whole.
    2. Roast cauliflower until deeply golden and tender.

    4. Spoon vinaigrette over the hot cauliflower.

    Roasted Butternut Squash with Thyme Honey Butter

    Ingredients

    • Butternut squash
    • Olive oil
    • Salt
    • Black pepper
    • Butter
    • Honey
    • Fresh thyme
    • Red pepper flakes (optional)

    Instructions

    1. Preheat oven and prep squash (peel/seed/cube or slice).
    2. Toss squash with olive oil, salt, and pepper; spread on a sheet pan.
    3. Roast until caramelized and tender, flipping once.
    4. Melt butter with honey and thyme (and chili flakes if using).
    5. Toss or drizzle the honey-butter over the roasted squash.
    6. Serve warm.
