Tuscan Chicken with Zucchini and Tomatoes

Preparation
1 Heat the olive oil in a skillet over medium high heat.
2 Toss the chicken with the Tuscan seasoning, salt, and pepper. Add it to the hot skillet in a single layer.
3 Cook for 3-4 minutes until it browns and easily releases from the pan. Flip the chicken pieces over and brown on the other side until it is cooked through. Remove and set aside.
4 Add the zucchini and tomatoes. Cook for 4-5 minutes until the tomatoes begin to burst. Add the garlic and cook for 1 minute until fragrant.
5 Stir in the cream cheese and milk. Stir until the cream cheese melts into a sauce. Add the Parmesan cheese and stir until it melts into the sauce.
6 Add the chicken back to the pan and stir to combine. Season with salt and pepper. Serve with fresh basil, extra Parmesan, and fresh black pepper if desired.
