Pappardelle with Sorrel Butter & Pine Nuts
- Cook the pappardelle pasta according to package instructions. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the chopped sorrel leaves and sauté until wilted, about 2 minutes.
- Add the cooked pasta to the skillet and toss to coat with the sorrel butter. Cook for another 2 minutes to heat through.
- Remove from heat and stir in grated Parmesan cheese. Season with salt and pepper to taste.
- Divide the pasta among serving plates and sprinkle with toasted pine nuts. Serve immediately.
