Garlicky Lacinato Kale with Savory Chickpeas
Preparation
- In a pan, heat the oil and sauté the onion, garlic and anchovies (add anchovy oil too!) for 1-2 minutes.
- With a large spoon, break apart the anchovies into smaller pieces as it sautés.
- Add the chickpeas and paprika, and sauté for another couple of minutes until chickpeas are golden and browned.
- Add the kale and sauté another couple of minutes until slightly wilted.
- Top with Parmesan, salt and pepper to taste and enjoy!! ⠀
