Roasted Radishes with Rosemary and Honey

Ingredients
FOR THE ROASTED RADISHES
  • 2 bunches radishes, cleaned and trimmed, larger ones halved or quartered
  • 1 tablespoon extra virgin olive oil
  • 1 generous pinch of kosher salt
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon honey
FOR THE DIPPING SAUCE
  • 1/4 cup plain greek yogurt
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey mustard
  • 1 teaspoon lemon juice

Preparation
FOR THE ROASTED RADISHES
  1. Preheat oven to 425 degrees. Grease a baking sheet with cooking spray.
  2. Place radishes on the baking sheet and toss with olive oil, salt, rosemary and honey.
  3. Roast for 30-35 minutes, stirring occasionally so they cook evenly and don't burn. Remove from oven when wrinkled with a crispy exterior and soft interior.
FOR THE DIPPING SAUCE
  1. Combine all ingredients in a small bowl and stir together until mixed.
