Olive Oil Cake with Fuyu Persimmons and Cardamom

recipe from our very own P2P staff member, Grace
makes 9 inch cake
Ingredients
  • -2-3 small fuyu persimmons
  • -1 cup oat milk
  • -1 tbsp. rice vinegar
  • -2 tbsps. vanilla extract
  • -1 tbsp. Cardamom
  • -½ cup sugar
  • -½ cup olive oil
  • -2 cups flour
  • 1 tsp. baking soda
  • -1 tsp. salt

Preparation
-Set oven to 325°F
-Cut Fuyus into large coins and line at the bottom of greased  9 inch round pan
-Whisk together oat milk and vinegar until frothy
-Add together dry ingredients then stir milk mixture in
-Slowly pour on top of persimmons in pan
-Bake for about 45 minutes until fork comes out clean
-Let cool, serve.
