Lemon Marinated Beets with Goat Cheese

Ingredients
  • 3 whole beets, peeled and sliced 1/4" thick
  • 1/4 cup extra virgin olive oil
  • 1 whole lemon, juiced
  • 2 Tbsp salt
  • 2 Tbsp black pepper
  • 4 Tbsp goat cheese, crumbled

Preparation
  1. Place beets in zip-lock bag, add lemon juice, olive-oil, salt and pepper
  2. Marinate overnight to let beets soak up all of the flavors
  3. Preheat oven to 400F
  4. Place beets in baking dish and cook for 40-50 minutes flipping halfway through
  5. Beets will be finished when fork tender, cook longer if you prefer them crispier
  6. Top with goat cheese
