Kale and Potato Breakfast Hash

Serves 2-3
Ingredients
  • 1 pound fingerling potatoes, sliced
  • 2 teaspoons olive oil
  • 1/2 bell pepper, thinly sliced
  • 2 cloves garlic, chopped
  • 1 head lacinato kale, leaves torn and chopped
  • 2 green onions, sliced
  • 3 eggs
  • salt and pepper to taste

Preparation
  1. If you have a pan that is safe to go in the oven, preheat the oven to 400 degrees Fahrenheit. Otherwise, you can do this all on the stove top.
  2. Heat the oil in a large saute pan over medium-high heat. Saute the potatoes for 5 minutes, until browned. Add the peppers, garlic and green onions and cook for 2 minutes until softened. Add the kale and cook until wilted, about 1 minute. Season with salt and pepper.
  3. Create three small wells in the pan and crack the eggs. Turn the heat down to medium-low and cook until the eggs are cooked through, about 10 minutes. Otherwise, put the pan in the oven and cook for 6 minutes until the eggs are done. Enjoy immediately!
