Chilled Beet and Cantaloupe Soup

Serves 4

Ingredients 
  • 1 pound fresh red beets
  • Butter or oil
  • 1/2   medium red onion, peeled and chopped
  • 2 cloves  fresh garlic, minced
  • 1/2  teaspoon  salt
  • 1  small or baby cantaloupe
  • Juice and zest of 2 fresh lemons
  • 1 cup  fresh orange juice​

Preparation
  1. Peel beets and steam in a steamer basket until tender, about 5 minutes.
  2. Cut beets into quarters.
  3. Cook onion in 1 tablespoon butter or oil until tender, about 5 minutes.
  4. Add garlic and cook for 1 minute.
  5. Puree onion, garlic, and beets in a food processor or blender.
  6. Cut cantaloupe in half, remove seeds, scoop out, and puree with beets.
  7. Season with lemon juice and salt.
  8. Add orange juice and serve chilled
